Peach Cobbler Recipe

I'm not going to lie, we had peach cobbler for dinner last night. Peaches are healthy right?!? I asked hubby if I could just make it for dinner because we needed to use up some peaches and I really didn't feel like scrounging up something for dinner too. He kinda laughed at me like it was a silly idea. I laughed too; it was a silly idea. I started looking through the fridge, freezer, and pantry to find something easy and fast for dinner. A short while later hubby asked, "Well, are you going to make peach cobbler?"

{I did. It was dinner.}

Do you know how to easily peel peaches? No? Ok I'll tell you. If you already know this trick you're awesome.


Slice an "x" through the skin on the bottom. Plop them in boiling water for 2-3 minutes. These are small peaches it didn't take long at all. Finally dunk them in a bowl of ice water to stop the cooking. Look they're practically peeling themselves for you.

Now give yourself a pat on the back because you're a peach peeling master! Then laugh at yourself because it's ridiculous that you're making a hot dessert, on a hot day, for dinner. There's no turning back now.



This is where it gets slimy. Slice and pit the peaches. You really only need 3 cups. I ended up with a heaping 4 cups because I needed to use them up.



Mix water, sugars, cornstarch, and lemon juice over medium heat until boiling and thickened then add your peaches. Pour the mixture into a greased baking dish.


Mix the dry ingredients then add the milk and butter (real butter is always better). Then dollop the dough over the peach mixture. Put it in the oven and bake.


When you pull it out of the oven the kitties will let you know that it smells so good. Or they're just little kittens that have to get into everything.




Serve it up and enjoy! I will make this again; it was delicious. Though, next time I don't think it will be for dinner. It would be even more delicious with some vanilla ice cream or freshly whipped cream.

Here's the full recipe. My mother-in-law sent it my way.

Filling
1/2 cup water
2 T sugar
2 T brown sugar
1 T cornstarch
1 T lemon juice
1 tsp cinnamon (This wasn't in the original recipe, but I thought it should be. Nutmeg would be good too.)
3 cups peeled fresh peaches

Topping
1 cup flour
1/4 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 c melted butter

Sprinkle peaches with cinnamon and stir. In a sauce pan combine the first 5 ingredients, bring to a boil stirring until thick add fruit. Pour into a greased 2 qt baking dish.
For the topping combine the flour, sugar, baking powder and salt in mixing bowl. Stir in milk and melted butter. Dollop over fruit mixture.
Bake at 375 for *50 min or until top is golden brown and tests done.

*Mine didn't take close to 50 minutes, maybe 35 minutes. It was dark golden and I tested the dough with a toothpick and it came out clean. Maybe a lower temperature would make a difference?
